Ingredients:
- ~1.3 lb Farmer’s Cheese
- 2 large eggs
- 3 tablespoons sugar
- ½ cup all purpose flour
- pinch of salt
- ¼ teaspoon baking soda
- ¼ teaspoon vanilla extract
- ~½ teaspoon white vinegar.
Directions:
1. Deposit Farmer’s Cheese into a large bowl.
2. Sift together flour, sugar, and salt into the cheese.
3. Add eggs, and vanilla extract.
4. Combine the baking soda with enough white vinegar to stop the chemical reactions and add to the dough.
5. Mix thoroughly until smooth. If too wet, add more flour.
6. Preheat a greased skillet. Spread flour onto a cutting board.
7. Make pancakes by the tablespoonful, coat with flour, and fry until browned. Flip and brown again.
Serve with sour cream and jam. Makes 12 to 15.
